INGREDIENTS :
- 1/2 cup butter, softened
- 3/4 cup coconut sugar (or brown sugar)
- 1 large egg
- 2 teaspoons vanilla extract
- 1/4 cup orange juice
- 1 tablespoon grated orange zest
- 1-1/2 cups white whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dried cranberries
- 1/2 cup white chocolate, melted
INSTRUCTIONS :
- Preheat oven to 350F. Line two baking sheets with parchment paper and set aside
- In a large bowl, beat butter and sugar together until completely creamy. Beat in egg, vanilla, orange juice, and zest until smooth. Combine flour, baking powder, and salt. Beat flour mixture into liquid until a soft dough forms. Stir in dried cranberries.
- Scoop dough into 1-in balls and place 1-in apart on prepared baking sheets. Bake cookies at 350F 9-10 minutes or until edges just begin to brown. Allow to cool on baking sheet 5 minutes, then transfer to a wire cooling rack to cool completely.
- Once cookies are cooled, dip half of each cookie in melted white chocolate and place on wax paper to set for 1 hour (or refrigerate for a few minutes to harden the chocolate) Enjoy!
