Easy Waffle Iron Quesadillas

Crisp comforting Waffle Iron Quesadillas, made with airy waffles and plenty of Tex Mex flavor!

Earlier this year i used to be enjoying a huge serving of Chicken & Waffles at an area diner.

In the middle of an enormous sticky bite, dripping with syrup , it dawned on me that I might prefer all my breakfast items to be savory rather than sweet.

I love syrup and every one kinds of sweets and treats. Yet when it involves breakfast, I tend to lean towards salt and spice to flavor my food.

We sat there eating a number of the simplest Chicken and Waffles we’ve ever tried, and every one along I was thinking I might have preferred a waffle and sandwich , skipping the syrup all at once .

Easy Waffle Iron Quesadillas

For the Waffle Batter:

  • 1 1/4 cups all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup cornstarch
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs
  • 6 tablespoons melted butter, unsalted
  • 1 cup whole milk
  • 1 cup seltzer water
  • Cooking spray

For the Fillings:

  • 1 1/2 cups shredded Mexican cheese blend
  • 1 1/4 cup cooked shredded chicken
  • 3/4 cup diced bell peppers, any color
  • 3/4 cup diced red onion
  • 3/4 cup pico de gallo
  • Guacamole, optional
  • Sour cream, optional


  1. Preheat a waffle iron to the highest temperature possible.
  2. In a large mixing bowl, whisk the flour, cornmeal, cornstarch, sugar, baking powder, baking soda, salt, pepper, and garlic powder together.  Whisk in the eggs, melted butter, and milk. Allow the batter to rest reserving the seltzer water for later.
  3. Meanwhile, chop and prep all the quesadilla fillings.
  4. When you are ready to start cooking, whisk the seltzer water into the waffle batter. Spray the hot waffle iron with nonstick cooking spray.
  5. Ladle the waffle batter onto the hot iron. Use enough batter to cover the waffle iron without spilling over the edges, usually around 1/3 cup.
  6. Sprinkle diced onions and peppers over the waffle batter and close the waffle iron. Rotate the waffle iron (if your waffle maker offers that option) and cook for approximately 2 minutes, until lightly golden.
  7. Open the waffle maker and sprinkle shredded chicken, cheese, and pico de gallo over half of the waffle. Use wooden tongs to fold the other half of the waffle over the top of the fillings and close the waffle iron again. Cook again for 2-3 minutes to heat the fillings and crisp up the edges.
  8. Carefully lift out of the waffle maker and serve while hot, with guacamole and sour cream if desired. Repeat with the remaining ingredients.
