INGREDIENTS :

  • 1/8 Teaspoon ground cinnamon
  • 1/4 cup butter
  • 1 Tablespoon honey
  • 1 cup chopped fresh pineapple or juice packed pineapple tidbits, drained
  • 1 pint vanilla ice cream
  • 1/4 cup packed brown sugar
  • 1 loaf frozen pound cake (like Sara Lee)
  • whipped cream
  • maraschino cherries

INSTRUCTIONS :

  1. Melt the butter in a small heavy duty saucepan over medium heat. Add the brown sugar, honey and cinnamon to the pan. Stir the ingredients together. Bring the mixture to a boil, after it boils reduce the heat. Simmer the ingredients, uncovered for 2 minutes. Add the pineapple tidbits to the pan. Cook and stir the ingredients for 2 minutes or until heated through. Remove the pan from the heat.
  2. Scoop ice cream into dessert dishes. Top with crumbled cake, warm pineapple mixture, whipped cream and a cherry. Serve immediately.
